The FlatBird Cooking Guide

Every bird is done when the thickest part of the thigh reads 165°F. Rest 10 minutes. Carve. Cluck.

Grill

Two-zone fire, 375–400°F. Skin side up over indirect heat 30–35 min, then flip over direct heat 5–8 min to crisp. ~40 min.

Oven

425°F on a sheet pan, skin side up. Roast 40–45 min until golden and 165°F. Broil 2 min at the end for extra crackle. ~45 min.

Smoker

275°F with hickory or pecan. Smoke skin side up 1.5–2 hrs. Finish over high heat or under the broiler to crisp the skin. ~2 hrs.
